Juan's farm is in the Santabarbara department at 1400 masl on 2 hectares that he purchased in 2016. Juan works meticulously in the coffee processing, starting with the harvesting of the cherries, followed by the pulping of the coffee, and finally, the fermentation process that can last up to 14 hours. This fermentation takes place in concrete tanks, followed by a thorough washing in abundant water. The process concludes with a slow sun-drying phase, which has led to a continuous improvement in quality.
